Sweet potato, Kale, Tempeh, and Vegan Feta Tacos
Ingredients:
- BBQ tempeh 
- Garlicky Kale: - 3 cloves garlic 
- 2 cups of kale 
- 1 tbsp garlic powder 
- 1 tbsp lemon juice 
- Coconut oil 
- Salt 
 
- Hummus 
- Almond, chickpea or corn based tortillas 
- Plant-based feta 
Directions:
- Prepare the sweet potatoes (see recipe here) 
- Prepare the BBQ tempeh 
- For the kale, rince it and heat up a pan with a little bit of coconut oil 
- Chop the kale and mince the garlic 
- Place both in the pan and keep stirring 
- Add a little bit of salt and let cook for about 5 min while stirring occasionally 
- Add the garlic powder and lemon juice 
- Warm up the tortillas and add about 1 tbsp of hummus on it. 
- Add the tempeh, the sweet potatoes, the kale, and add a few small pieces of plant-based feta on top.
